German Potato Salad

Traditional potato salads usually make their appearance at summertime picnics and BBQs, but when the air is chilly and temperatures drop, I’m not in the mood for a cold, mayonnaise-based salad. Fall weather calls for a hearty and warm potato salad with a slightly sweet, slightly tangy dressing and plenty of crisp bacon. This is a great side dish to serve with Oven-Grilled Turkey Reuben Sandwiches.

Of course - bacon! I'm going to try this; we're supposed to get some potatoes in our own box next week.

This is a great salad to eat with a nice hearty beer. The flavors work very well together.

I made this tonight to go with some hamburgers for the first BBQ of spring! I was thinking german potato salad, saw this recipe on tastespotting and it looked just the ticket.

I did change some things, I added some (1/2 Tbsp) capers to the simmering dressing, and used chives (and some fresh dill I had lying around) because I lacked parsley. It came out wonderfully!
