Basil Green Goddess Dressing

Another triple play! – a creamy green goddess dressing, made with basil rather than the traditional tarragon, flavored with garlic, scallions and lemon juice tops fresh, crisp lettuce. This versatile dressing is the perfect consistency for dipping fresh vegetables or using as a condiment on sandwiches. Whisk in a little water, and it’s the right consistency for an all-purpose salad dressing.

This recipe is from Ina Garten’s Barefoot Contessa at Home. I am a huge fan of her books, her Food Network show and her recipes and I can’t recommend them enough. Her cooking is simple, delicious and approachable. Try this recipe and you’ll see for yourself. Enjoy!

Like your blog - new here - tried the green goddess dressing and it was WAY too salty for me. Down the drain it went. I will try it again, this time adding a teensy bit of salt at the end.

Hi Karen, it is on the saltier side, but I usually season my dressings really well and then skip any seasoning to the actual lettuce or greens. Also, I use kosher salt which has more volume. So, if a recipe calls for 1 teaspoon of kosher salt, then you would only use 1/2 teaspoon of table salt if that's all you had on hand. I hope you like the second try better! It really is a good dressing :)

Thanks for that and yes, I will try it again - and I did use kosher salt, but will hold off till the end. After all, I have an entire tube of anchovey paste sitting in my fridge!

I'm planning to make this tomorrow. I think I'll try to shoot it, but I don't think it will be as pretty as your picture!
