We’ve been lucky this year with carrots – this was the fifth week in a row that we’ve received a bunch in our box. Last year, I can only remember getting them once or twice due to the incessant 2007 August rain. But this year, the farm has been yielding bumper crops, and it’s likely we’ll receive more on Saturday. So, what do to with all those carrots? How about a cool, crunchy, spicy Moroccan Carrot Salad – a great alternative to boring, old carrot sticks.

I love this Moroccan carrot salad. Carrots always seem to get short shrift in our house, always the supporting actor and never the star. I would love to do a carrot-star recipe on of these days.
Giada de Laurentis of the food network did a great shaved carrot and pear salad with a curry vinagrette. It was awesome!
Oh this is very exciting--I always order this amazing carrot salad from a restaurant here in LA and have always wondered what they put in it--and this recipe sounds like it could be very similar. I'm definitely going to try it!!!
